EATS: Chia Seed Pudding

I wrote this back when schools started to reopen, circa fall of 2021?

With in-person learning this school year, cutting down morning routine is key to a smooth start of the day. My cousin Indy shared this recipe, so I decided to jump on the chia seed pudding band wagon because it’s healthy, filling, and can be prepared the night before. Here is our version, if you would like to try!

Ingredients (serves 2)

  • 150ml almond milk
  • 2 Tsp chia seeds
  • 1/4 tsp ground cardomon
  • 1/4 tsp ground cinnamon
  • 1/4 tsp pure vanilla extract
  • 1/2 Tsp agave

Steps:

  • Measure everything out and put them in a mason jar. Stir to mix in the agave or honey. Like this:
  • Shake vigorously to coat and mix the chia seed. Like this:
  • Let the magic happen overnight
  • Voila! Enjoy an instant breakfast. In our case, we like to add blueberries, strawberries, blackberries, and a sprinkle of granola. Enjoy!
